Sender / meter combinations

I’m planning on using a Fiat water temp gauge as an oil temperature gauge, with the markings suitably altered. Will a water temperature sender unit work as an oil temperature sender? Should I use an oil temperature sender, in which case will it suit the gauge? All a bit beyond me I’m afraid.

Yes, as long as it's the same one as used with the gauge originally (or electrically identical).
