hello I have just joined and hopefully will be purchasing a stratos within the next 6 months. One thing I have noticed is that most of the cars for sale tend to be hf2000 as opposed to 3000 is there any reason for this. thanks for the help.

This is because mostly the cars that come up for sale these days are older part finished kits that used Beta 2000 lumps, then the Alfa V6 3000 engine became an option and hence people buy the HF2000 and convert it.
I would imagine most of the kits sold these days are spec'ed for 3000 V6 power units rather than 2 litre lumps.
Converting an HF2000 is going to be cheaper than buying a new kit and building from scratch. (Well should be!!)
