I am looking for a soft, breathable and water proof car cover for indoor and outdoor use that fits well on a Strato’s. Can anyone recommend any suppliers to me please.

I could recommend a couple of suppliers in the USA. I recently ordered a custom cover from these guys for my '73 Chevy Nova:

The cover fits the Nova snugly, but I'm not sure if they have a pattern for a Stratos. They've supposedly got 40,000 patterns available. Thier X1/9 cover is probably a close match in size, and costs about $169US in their "Noah" material. I used it for my latest cover. It's supposed to be the best all around indoor/outdoor/UV/Rain cover, but there might be a better choice if you have only one environment in mind (for example, they have a dust cover fabric ideal for indoor storage, and another better suited for wet outdoor storage)

These guys will do custom covers in the same materials (In fact, they may manufacture the covers for the first company) to customer supplied dimensions:

When I eventually get my kit finished, I was going to have a pattern made for a Stratos. The nice thing is, if one of us comissions a custom cover, any of the rest of us can order it right from the catalog. The price for subsequent copies would probably be in the range of the X1/9 cover above, since it's a similarly sized vehicle.
